कोबी मन्चुरिअन | Veg Manchurian Dry Recipe | Fried or Not | Crispy Chinese starter | Ep - 269

Let's see how to make kobi or cabbage manchurian today. Take 2 cups finely chopped cabbage in a bowl.
Do not use grated cabbage. If you use grated cabbage, it releases lot of moisture and you have to add more maida.
So try to use finely chopped cabbage. Add 1/2 cup grated carrot. You can add veggies of your choice.
Add 1/2 cup finely chopped capsicum, 1 tsp finely chopped garlic, 1 tsp finely chopped ginger,
Try to make very fine pieces of ginger and garlic. Add 1/4 tsp black pepper powder, 1/2 tsp chili flakes,
You can add finely chopped chillies instead of chili flakes. Add spring onion. Mix everything well together.
You also can add red chili sauce, a little soya sauce if you want. After mixing well add 1/4 cup maida.
Add 1/4 cup corn flour and mix well. Add salt to taste. Do not use any water at all. Go on mixing.
As you go on mixing, water will be absorbed. If you add water it will be too runny.
The manchurian that we buy from market, it is nice and crunchy. These are crispy and a little chewy.
To get that texture, I am using 1/2 cup rice. This is left over rice. You can use fresh rice too.
Mash the rice really good and add. Rice gives nice crisp and good texture to manchurian. Mix well after adding rice.
I have mixed everything well. It is soft. I haven't used any water at all. Still it has got nice binding.
Let's make small balls from it. Do not use any water at all. The mixture will be too loose if you use water.
Knead the mixture pressing a little. That helps to rlelase the moisture in veggies. Do not make such balls.
You can directly drop the manchurian in oil. But as I want to show you, I am making small balls.
Like so. I have made 5-6 manchurian balls. Let's fry these. If you don't want to deep fry then you can shallow fry in appe patra.
I will fry few just to show you and the remaining will make in the evening. Flip them over after about 2-3 minutes with fork.
Fry until these turn nice and brown. Manchurians are nicely fried. Take these out into a dish. These are nice and crunchy.
These are crispy. I will shallow fry some manchurian in appe patra. Add about 2-3 drops oil in each mould of appe patra .
Put manchurain ball in each mould and fry until these turn nice brown. Flip over after 2-3 minutes with spoon or fork.
Manchurian balls are already. Let's see how to make gravy. Due to rice these balls become crunchy and crispy.
Heat up 1 tbsp oil in a pan. Add 1 tsp finely chopped garlic. Fry for about 30-40 seconds. Take 1 tsp corn flour in a bowl.
Add a little water and make slurry. We use corn flour to give thickness to sauce. When garlic is about to fry
Add 1/2 cup sliced onion. You can add sliced cabbage along with onion. You can add veggies too like carrot, capsicum.
But mostly I don't add veggies as we already have added everything in manchurian. Fry onion a little
Add 1 tsp chopped garlic. Fry onion a little. When onion is about to fry, add 2 whole green chilles.
You can add slit chillies if you want. Add remaining ingredients quickly. Add black pepper powder,
1 tsp soya sauce, 1 tbsp red chili sauce. This sauce is not too hot. So I am adding a little more.
1 tsp tomato ketchup, salt to taste. All these sauces already contian salt. So add salt carefully.
Mix well. Add corn flour mixture, little water and mix well. If you want to make gravy, you can increase quantity of water.
If you want it dry then this gravy is perfect. Cook for 2 minutes to remove rawness of corn flour.
I have cooked gravy for about 5 minutes really good. We are not making this manchurian too thin.
Add about 2-3 drops vinegar to give tangy taste. You also can add lemon juice. Add manchurian balls in gravy.
And toss these really good. Add spring onion. Cook for about 2-3 minutes after adding manchurian balls.
Turn off the gas. Manchurian has got nice coating of the gravy. Let' s serve. Manchurian is looking yummy.
Garnish with spring onion. You can serve this hot. It tastes awesome. If you want to make gravy
Then add more corn flour slurry and increase quantity of water. That's the only difference in dry and gravy manchurian.

Go on mixing and moisture released from veggies will be absorbed. • Mash cooked rice well and add. • Mix well and make dough of it. Do not use any water at all. • Make small balls from the dough. • Heat up oil in a pan and drop Manchurian balls in it. • Flip these over after frying for about 2-3 minutes. Fry until these turn nice brown. • Take these out into a dish. • Manchurian balls are already. • You can shallow fry the Manchurian balls in appe patra if you don’t want to deep fry these. • Take corn flour into a bowl and add water. • Mix well to make corn flour slurry and keep it aside. • Heat up oil in a pan. • Add garlic and for about 30-40 seconds. • Add sliced onion and fry it a little. • Add ginger and fry a little. • Add green chilies, black pepper powder, soya sauce, red chili sauce, tomato ketchup and salt. • Be careful while adding salt as all these sauces contain salt. • Mix well and add corn flour slurry and water. • Mix well and cook for about 2 minutes until rawness of corn flour is removed. • If you want to make gravy then add more corn flour slurry and more water. • Add a little vinegar to give the tangy taste and mix well. • You can add lemon juice instead of vinegar. • Add Manchurian balls and stir well. • Add spring onion and mix well. • Cook for 2-3 minutes more and turn off the gas. • Veg Manchurian is already. • Serve and garnish with spring onion. Tips: • Do not use grated cabbage as it releases more moisture. Use finely chopped cabbage only. • You can add finely chopped chilies instead of chili flakes in Manchurian balls mixture. • You can add red chili sauce, soya sauce in Manchurian balls mixture. • If you add water in Manchurian balls mixture then it will be thin and you will have to add more maida. • Cooked rice helps in making the Manchurian balls crispy and it gives nice texture to it. • You can add veggies of your chioce in Manchurian sauce too.
