मेदू वडा | How To Make Crispy Medu Vada | South Indian Recipes | MadhurasRecipe
Hello, I am Madhura and welcome to MadhurasRecipe Marathi
Let's see how to make medu vada today. Take 1 cup Urad dal into a bowl.
Wash dal 2-3 times really good. After washing dal, add 2 cups water in it.
I have soaked urad dal for 4 hours. You can see. Dal has puffed up almost double in size.
Let's grind this dal. Transfer the dal into blender pot. Add minimum water while blending this dal.
I will blend the dal in 2 batches. Let's blend in blender. We are blending dal adding minimum water.
So what to do? Blend for about 30-40 seconds. Mix the dal well with butter knife, bring the sides in the middle.
Then blend again. I have blended this batter. I haven't added any water while blending this batter.
A little patience are required. It took about 4-5 minutes for 1 batch to be blended. Blend for 30-40 seconds,
Bring the batter at the sides at the centre with knife and blend again. It is nicely blended but takes a little more time.
Add salt to taste. You can add ingredients accroding to your taste like ginger pieces, green chili, coriander leaves
But mostly I keep it plain. Beat the batter for about 3-4 minutes. Make it light. Mix well.
I have beaten the batter for about 3-4 minutes nicely. It has turned fluffy, light like cream. Next important step is,
That is frying the vada. Watch this carefully. Dip hand in water. Dip your palm too as we want to make vada.
Dip both the hands nicely in water. Take 1 tbsp batter. Like so. Make it round from all sides.
When it is almost round, take it on the 4 fingers, make a hole at the centre with thumb and drop it in oil.
Let's see again. Take on fingers, keep thumb at the centre and drop in round shape in oil.
Though these are not looking even in shape, as vade will get fried, they will puff up and will look round in shape.
Fry this vada on medium heat only. Do not fry on too high heat. Or it will remain raw from inside. You can see,
Vada was uneven while dropping in oil. But it has become round now. Flip over when vada gets light golden colour.
After frying for about 3-4 minutes, flip the vada over. Fry from other side as well. Like so. Vade have been fried.
Let's take them out. Looking yummy. These are nice and crispy. Medu vada is fried and ready. Let's make next batch.
Medu vada is looking just awesome. You can serve this with sambar and khobaryachi chutney.

Remove the batter at the side to the center of the blender pot with the help of knife and blend again. • Repeat the process until it batter turns into fine paste. • Take the batter out into a bowl. • Add salt and mix well. • Beat the batter for about 4-5 minutes really good to make it light and fluffy. • Heat up oil in a pan. • Soak both the hands in water. • Take a spoonful of water in hand and make it round. • When it is almost round, take it on 4 fingers, make a hole at the center with thumb and drop vada into oil. • Fry vada on medium heat only. If you fry it on too high heat, it can remain raw from inside. • After frying for about 3-4 minutes, flip it over and from other side as well. • Fry until it turns nice golden from both sides. • Take vada out of oil, drain excess oil and put it into a dish. • Medu vada is already. • You can serve medu vada with sambar and khobaryachi chutney.
